The menu is described as Contemporary Californian, incorporating American, Asian, Italian, and Mexican influences. According to general manager Parker Sprow, the goal was to create a dining experience that stands out while honoring the Roosevelt's history. Dishes are inspired by the diverse cultures of Los Angeles.
A centerpiece of the menu is the grilled branzino, served ssam style with Mexican-inspired salsa macha and salsa verde. Another item, the Sixth and Wilshire pizza, features bulgogi, red sauce, kimchi, and mozzarella, reflecting a Korean twist. The drink menu is categorized into bright, whimsical, spirited, and spiritless options, including creations like the Yellow King, made with tequila, yellow tomato, miso honey, stonefruit, and basil.
Critics have already noted the restaurant, with TimeOut calling it "the new king of Hollywood." Eater has also praised menu items such as a pork chop with anticucho glaze and grilled peaches. Sprow stated that the restaurant has had fully booked nights and is accumulating regulars.
This opening brings a new dining option to Hollywood Boulevard, an area that has faced challenges with high vacancy rates. Gable intends to serve both hotel guests and local residents, aiming to provide a reliable night out with good food and atmosphere.
